It’s simple and delicious.
Here’s how to make it: Heat up a nonstick skillet over medium-high heat.
Add the oil to the pan, then add the onions, garlic, ginger and oregano.
Stir the mixture to combine, then pour the mixture into the pan.
Cook, stirring constantly, for a couple minutes.
Reduce heat to low and add the chopped cauliflower, shallots and carrots.
Cook until the cauliflower is tender, about 2 to 3 minutes.
Add tomatoes, cilantro and salt and pepper to taste.
Pour the mixture over the noodles and let cook until the noodles are tender, 1 to 2 minutes.
Drain and serve hot.
