Ingredients: 1 cup shredded cheddar cheese (I use Kraft’s), cut into chunks 1 cup chopped red onion (I like red onion), diced 1/4 cup minced garlic 1/2 cup chopped fresh parsley (I add a little bit more parsley than the recipe calls for) 2 tsp dried oregano (or more to taste) 1 tsp basil leaves 1 tsp fresh thyme leaves 1/3 cup dry white wine (optional) 1/8 tsp salt 1/16 tsp pepper (optional, but highly recommended) Directions: In a medium saucepan, melt the cheddar and onion.
Add the garlic, oreganos, parsley, thyme, and red pepper and stir until well combined.
Add all of the dry wine and salt and mix well.
Bring to a boil, reduce heat, and simmer until cheese is melted, about 30 minutes.
In a separate bowl, whisk together the wine, basil, and thyme.
Season with salt and pepper.
Remove the cheese from the saucepan and add it to the bowl with the dry white.
Pour the wine mixture into the bowl, season with salt, and pepper, and stir well.
Stir in the chopped fresh herbs.
Pour into a bowl and top with the red onion, parsleys, garlic, red wine, and fresh herbs, if using.
