Remove the bones from the pork shoulder.

You can also slice it into chunks, and then drain and freeze it, or you can thaw it in the microwave.

Meanwhile, prepare the Hamming Cheese: In a large bowl, combine the beef broth and chicken broth in a separate bowl.

Bring the mixture to a slow boil, then lower the heat to medium low and cover the bowl with a lid.

Keep stirring until the mixture thickens and the mixture is no longer cloudy, about 5 minutes.

Meanwhile prepare the cheese: In the same bowl, whisk together the Parmesan and thyme.

Add to the bowl, then whisk in the lemon juice, cayanne and cinnamony.

Add about 1 tablespoon each of salt, red pepper, cumin, oreganes, cilantro, and parsley to the cheese mixture.

Taste and season with salt.

Meanwhile combine the remaining hamshots and all the hammeat, the pork, and the cheese.

Cook on low heat for about 15 minutes.
